A huge colab between Colet and Equipo Navazos (my favourite Sherry producer). This is insanely good.
100% Xarel.lo with small amounts of flor yeasts and Pedro Ximenez in place of dosage. The result is a truly unique dry sparkling wine, with unmistakable, but subtle, sherry aromas, and lovely elegance and balance.
