Clément Lavallée, Chablis 2020

Clément Lavallée spent eight years studying wine before returning home to the family Domaine in the village of Saint-Bris-Le-Vineux, just 10 miles from Chablis. On his return he originally planned to work alongside his father but he soon realised they had conflicting views and that he wanted to forge his own path. After securing his own vineyards, he began to work naturally with no insecticides and very little intervention. He even opted to invest in an old tractor as they are lighter and damage the soil less than the larger more modern machines. It was not long before his Father Erick realised his son was on to something good and handed over 3.7 hectares of vines to help increase the production.
