Sylvaner, but not as you know it. Just the right amount of haze on show here, it was left on the skins for a few hours and bottled unfiltered, so will throw a decent sediment. Maximum raciness, it's one for my acid heads. This, allied by a good smack of fruit and some herbal spice makes for some pretty compelling drinking. ABV: 12%

Weingut DB Schmitt’s winery has been in the family for 230 years, and has been run for the last ten by Bianka and Daniel, who oversee 16 hectares in the Rheinhessen region. The winery is fully biodynamic and is one of only 80 producers in Germany to be Demeter certified. The Rheinhessen was historically known as an area for mass production, but Bianka and Daniel are at the forefront of a slew of young, innovative winemakers seeking to reduce yields and maximise the region’s unique terroir to make high quality, low intervention wines. Their ‘Natur’ line has zero sulphur additions.
