Peter Gierszewski built the five-hectare estate of Domaine de Thalie, situated in the hills above Cluny, from scratch, purchasing old vines and turning an old farmhouse into a cellar. Peter farms organically and biodynamically and presides over a diverse range of soils – Burgundy limestone meeting Beaujolais granite – and the grapes span both areas too: Chardonnay, Pinot Noir, Gamay, even a sprinkling of Syrah. Vines are planted west-facing rather than the traditional south-east, giving the wines lift and freshness.
