Chardonnay off a South/South East facing slope with pure limestone soils... Nervy and racy acid balanced out by some nicely opulent fruit. Kind of like Chablis meets Cote d'Or, which I really, really like the sound of. Stunning.
Producer: Guilhelm et Jean-Hughes Goisot
Region/Country: Burgundy, France
Production Method: Organic and biodynamic farming. Wild yeast fermentation in older oak barrels before maturation in older oak in contact with fine lees.
Style: Elegant and restrained with racy acidity balancing out its citrus and stone fruited profile. Will develop richness with cellar time.
Pairing Suggestion: Roast chicken, seafood, on its own.
