Two great minds combine here, love it when that happens. Right so here we go. Palomino Fino is wild yeast fermented and transferred to bota (old American oak casks), only filled to 5/6th of their capacity, where the juice rests and develops a layer of flor yeast. It sits for 8 months. If you like wines from the Jura then this is worth a stab. Chalky and saline, very mineral and extremely driving. This is a beautiful thing and really deserves a long lunch. Who doesn't like long lunch?
