Nikau Farm, Tonimbuk Pinot Noir 2020

All fruit is hand destemmed, cold soaked to get some colour out and then left for 14 days to ferment, it then heads to stainless steel for a rest. No oak, ever. Nada. Sits in tank, nothing added or removed, none of the usual tricks or racking. Just left to rest. The resulting wine is pretty bloody good. A mix of mineral drive, restrained fruit and purity of texture. One to savour.
