Production Method: Organic farming and natural fermentation with wild yeasts. Each variety is fermented separately and matured prior to blending. No fining, filtration or SO2 addition
Style: Flamboyant and expressive with herbal, smoky aromatics and dark fruit flavours. This may need some air to show it's best expression.
