Beautiful Syrah, full of summer fruits, vibrant acidity and peppery spice. A worldy.

Wine: PAX North Coast Syrah 2018

Producer: Pax Mahle

Region/Country: California, USA

Grape/s: Syrah

Production Method: Organic farming. Whole bunch fermentation with wild yeasts. The wine is aged in concrete and older oak before bottled unfined and unfiltered.

Style: Plush fruit with lovely peppery spice and savoury edge. Medium bodied with great freshness.

Pairing Suggestion: Game, grilled meats, Mediterranean cuisines

Variety: Syrah/Shiraz

Profile: Labelling a wine as Syrah or Shiraz used to be indicative of origin however now tends to refer to style. Wines labelled as Syrah will be in the classic French style, medium bodied, blue fruited and showing lovely peppery spice whereas Shiraz tends to be fuller in body, with riper red and black fruit character indicating a warmer climate - the Australian style. The variety responds very well to oak maturation, adding tannic structure to the fruity frame, allowing for extreme age ability. It is also a very good blending grape, adding richness, fruit and structure.

Classic Regions: Rhone Valley (France), Barossa Valley, McLaren Vale (Australia), Hawkes Bay (New Zealand)

PAX Wines

2014 heralded the return of the Pax label, like the original launched in 2000, “Pax 2.0” is Syrah-focused, with grapes sourced from cooler sites, mostly in Sonoma and Mendocino counties. Pax and Pam Mahle believe great wines can only be made from great vineyards, and work with sites they believe have the location, soil, exposition, dedicated growers and plant material to fulfil that potential. Grapes are sourced from organically farmed vineyards with low yields, crushed by foot, ferment is whole cluster using native yeasts, and wines are aged in mostly neutral French oak. Pax is an homage to classic Syrah, the wines have a purity of fruit and expression of place, impressively structured yet incredibly balanced.
