Chardonnay and Savagnin, produced in the ouillé (topped up) style synonymous with this Domaine. Electric, although you get some lovely fruit richness here too. Tangy acid, saline finish. A lot going on, best sit down.

Production Method: Organic farming. Wild yeast fermentation in neutral oak, before maturation in neutral oak as well. Topped up in barrel. Bottled without fining, filtration or SO2.
Style: Ripe fruited and relatively generous. Faint marzipan, oxidative character but this is all about fruit and minerality. Salty, moreish finish.
Pairing Suggestion: Poultry and richer seafood dishes. Alpine cuisine, cheese.
