The latest project from the increasingly busy Rajat Parr - a firm believer that the most fundamental part of winemaking happens in the vineyard. Therefore, only the best site would do so he settled on a small family estate in Cumbria, California just a stones throw from the Pacific Coast. Back in 2007 Greg Phelan began to plant ungrafted Pinot and Chardonnay and later when Rajat joined they began to experiment by planting a host of other European cool climate varieties. A holistic farming approach is taken with inspiration from Biodynamics, but also a keen focus on regenerative practices. Whole bunches are preferred in the cellar and of course everything here is spontaneously fermented before elevage in old oak. As per the best natural wines there is no fining, filtration and zero sulphur is used.
