José Luis is so dedicated to his land that while studying in Madrid he used to return to the family vineyard most weekend – a ten hour return bus journey. Gnarly! He works with a whopping 24 Galician varieties, on all kinds of soils, constantly experimenting and regrafting to make sure each vine is in the perfect spot. All his plots are vinified separately, and each vintage is curated in terms of fermentation, ageing vessels and time spent ageing. It’s a hell of an undertaking that involves a truckload of manual work, but a man who doesn’t mind a ten hour bus journey wouldn’t be put off by that. Thank God!
