This spend a day cold soaking before ferment, so we're presented with some lovely texture and grip. Wild florals, loads of citrus power and an undercurrent of ripe stone fruit, this is a beautiful drink.

Tetramythos are based in the northern Peloponnese in Greece. This is an area of ancient vineyard cultivation, dating back to 150AD. Everything here is high altitude, with vineyards planted between 600-1000m above sea level, which is very important for maintaining natural freshness during the hot growing season. The Tetramythos vineyards are mostly planted on north facing slopes, so they avoid the worst of the heat. All farming is organic, and the winemaking minimal in approach, with wild yeast fermentations and very small doses of sulphur. The Malagousia undergoes about 30 hours skin contact at very cold temperatures before a very gentle press where they are looking to only extract the free run juice for fermentation. It is bottled unfined and unfiltered. Beautifully aromatic, it really transports you somewhere else. Greece has some of the most expressive native varieties, with this wild alpine herbal thing going on but clear evidence of a Mediterranean growing climate. A lovely food friendly wine.
