Pedro Ximénez from up in Montilla-Moriles. The consistency of quality achieved by Albalá is nothing short of miraculous. Every wine, every release. Top notch stuff. Take note, sherry is on the comeback. Sun-dried fruit and a long, slow, oxygen-influenced maturation contributes to that lusciousness and extremely raisined character. Everything is dialled up but still in harmony. One sip is all it takes. ABV: 20%

Toro Albalá is based in Montilla-Moriles in eastern Spain, and is firmly established as one of the best producers of Pedro Ximénez going. He’s actually the only specialist in 100% vintage PX in the world. What a flex! The bodega is located in an old power station, which Jóse Mª Toro Albalá restored in 1922 – hence why some of their wines have ‘Eléctrico’ in the name. That, or they’re electric. Or both!
