This will have you reaching for the second bottle. A touch of sugar here which perfectly balances the lightly tart raspberry and strawberry fruits. Moreish, a bit weird, but bloody moreish nonetheless!

Production Method: Organic farming. Two days skin contact, wild yeast primary ferment in stainless steel and then re-fermentation in bottle by adding some free-run must from the same vintage. Undisgorged and no SO2.
Style: Lightly sparkling with generous red fruited character. A bit wild, and will throw some sediment in the bottle.
Pairing Suggestion: Very good on its own but will stand up to lighter dishes.
