Sous Voile Melon. Rare as. Essentially this is Vin Jaune but you can't call it that as it's not Savagnin. Savage. Matured in 400 litre casks, with oxygen working its magic, penetrating the flor to leave us with a wine of supreme complexity, length and balance. If Les Crets was begging for food, this demands it. Preferably mature Comte. You've been warned. ABV: 13.5%

Michel Gahier is seen by those in the know as one of the reference point producers in the Jura. The estate is based in Montigny-les-Arsures, close to Arbois. This is prime Trousseau territory, evident in the wines. Gahier also operates with Chardonnay and Savagnin. Work in both vineyard and cellar is meticulous and use of SO2 is sparing.
