Unfortified Palomino is making waves, albeit tiny ones! Bang for buck here is extraordinary. Fruit from the second pass through the vineyards (in Jerez this constitutes the best fruit) is mostly fermented in stainless, with a portion being dried out and matured under flor for a month. Freshness and fruit-forward appeal meets lightly nutty, saline texture. A wonderful thing to have in one's mouth. ABV: 13%
