The Bize estate was founded in 1868, but only started to rise to prominence under the leadership of Patrick Bize in the 70s. After his death in 2013, his wife Chisa took over, ensuring the Domaine remains faithful to tradition and is as hands-off as possible, with several vineyards operating completely biodynamically. They harvest whole or partially whole bunches and footstomp them to avoid extracting any harsh flavours, and use barely any new oak during ageing, if at all.
