Tim Wildman's latest project is traditional method sparkling, sourced from the ballroom of a stately home Tim found while searching for grapes for Lost in a Field. The inhabitants just happened to be sitting on a whole bunch of wine from over ten years ago. Casual! The 2010 is fresh as anything, impressive given it's getting on in years - a lovely bruised apple thing going on with some floral and spicy notes too. Champagne lifestyle on a pet-nat budget. This is a steal. ABV: 12%

British-born Tim Wildman became a Master of Wine in 2008, writing his thesis on Australian wine. He began his own winemaking project in 2014, leading the way for pét nats in Australia with his Astro Bunny and Piggy Pop labels. He works in Adelaide Hills with Mediterranean grape varieties, which suit the hot climate perfectly. His wines are fun, refreshing, and don’t take themselves too seriously.
