Masters of the random varietal (for Australia, anyway), Manon have turned these grapes into something much greater than the sum of their parts. Whole bunches of Sauvignon are macerated for 5 days, then they drop in destemmed Pinot Gris for 10 days, then pop the final pressing of their Geoponika cuvee into the juice for a few days. Why not? The result is so aromatic, white flowers, mandarin and peach (duh). Just so yum. ABV: 11%

Former Sydney chef Tim met New Zealander Monique, hailing from a family of vignerons, in Australia, and they settled in Adelaide Hills in 2016, overseeing ten hectares of land: six of vines, four of forest and fruit trees. The farm was formerly owned by a retired doctor and all-around eccentric, who planted it with a bunch of weird varietals for the area, like Savagnin and Pinot Gris. Only skilled hands could turn these into some of the most interesting, characterful wines I've ever tried. Luckily, Manon has such hands.
