Hugo Mathurin and Talloulah Dubourg are the young couple behind the newly formed Domaine de Cassiopée estate. When looking for a site, they wanted to find a place cold enough amidst the ever increasing challenges of climate change to produce fresh and light wines that they themselves liked to drink. This home was found in Sampigny-les-Maranges. This area has been slower than other appellations to embrace the organic approach to farming, and the young couple are energised to redefine the appellation through their site specific wines.
