It's a hard task finding truly unique and natural sherries in a market dominated by mass produced shelf-fillers but thankfully Maestro Sierra is here to save the day. Made in silly old barrels, settled by time, moved using manual siphoning and then bottled unfiltered and unfined. Despite their practices breaking some of the rules for sherry production the Consejo Regulador recognises the unique characteristics of their wines and grants them exceptions. The labels depict a fox being chased by a hunt and is representative of the winery being chased down by the larger sherry house. Stop sleeping on sherry.
