White blend, 48hrs on the skins, letting the grapes do their thing is the method here. 8 months in tank with full solids, nothing added or removed, then hand-bottled before 18 months resting in bottle. Magic. 9% abv. Mostly Chardonnay and Riesling here, there's no lack of presence or fruit power but it's a thing of ethereal nature. A bit reductive, so let the thing breathe. ABV: 9%

Dane of Momento Mori had various former lives – electronic musician, barista – before getting his winemaking nouse working with Aussie wine legends Adam Marks and Bill Downie. He and his wife Hannah now own three plots in Gippsland, Victoria, and also source quality fruit from trusted growers. Vinification is done with minimal intervention, with wild yeast fermentation, no new oak (yay!) and no additions. Their wines are electric – unique, characterful, fresh, pure, alive… adjectives on adjectives.
